Chocolate Salami

This dessert is very much loved in my house. It is an old recipe as you can tell from the measurements based on cups of tea!

Kids and adults adore it because of the chocolate, but also because of its crunchy texture. My little boy says “it’s an ice cream and a chocolate bar, but it’s a bit crazy looking…just like a salami!!!

It’s super easy to make but it will need to rest for 8+ hours in the freezer so it requires some patience!

 

Chocolate Salami

 

It’s a bit too much to eat in one helping, so we like to keep it in the freezer and every now and then cut a slice or two (from frozen) when we feel like a sweet bite!

 

Ingredients:

200 gr of butter

1 full tea cup of icing sugar

3 eggs

1 full tea cup of walnuts

300 gr of  Rich Tea biscuits (or similar plain crunchy biscuits)

1 full tbsp of cocoa  powder

Vanilla extract (optional)

1-2 tbsp of rum (optional)

 

Break the biscuits into small pieces (6 roughly per biscuit) and set aside. Break the walnuts into chunky pieces and set aside.

Beat the butter with the sugar, and then add 2 eggs (one at a time) and 1 yolk, mixing well all the ingredients. Now add the biscuits, the walnuts, the cocoa, the vanilla and the rum and combine well.

 

Pour the mixture onto a sheet of aluminium foil paper, then roll and squeeze it tightly into the shape of a salami. Place it in the freezer for 8+ hours.

 

When you are ready to eat it, take it out of the freezer, cut round shaped slices and serve it cold.  Enjoy!!!!!!
