This is a wonderful dish in spring. The colour, the texture and the flavour will spread lots of happiness on your dining table!
Ingredients for 2 people:
1 kg of fresh peas,
1 bunch of spring onions, chopped
1 medium size potato, peeled and diced
2 tbps of fresh mint
2 tsp of lemon juice
1L of vegetable stock
a pinch of sugar (optional)
Prep time: 25 min
Cooking time: 20 min
Put the spring onions into a large pan with the potato and stock simmer for 15 minutes (the potato should be soft).
Add the peas and boil for 3 minutes, then take a couple of spoons of peas out of the soup and set aside, as you will use them for garnishing.
Boil the soup for another 2 minutes.
Add the mint (leaving 4-6 small leaves aside for garnishing), sugar and lemon juice. Cool slightly then pour into a food processor or use a hand mixer to mash as smooth as you like.
Serve in bowls and garnish with the creme fraiche, fresh mint, the peas that you have set aside and pepper. Season with salt (optional, I didn't as the flavour was sweet and intense).
If you want to add a bit of texture and saltiness, you can add some croutons or fried bacon.
